Apple Cider Pound Cake
- 2 cups granulated sugar
- 1 cup Raven's Nest Mulling Spice
- 1.5 lbs butter (3 sticks), room temperature
- 6 eggs, room temperature
- 1 teaspoon vanilla
- 3 cups flour
- ½ tsp baking powder
- ½ tsp salt
- 1 cup apple juice or apple cider
- 1 teaspoon vanilla
Glaze
- 1 cup powdered sugar, sifted
- 1 tsp Raven's Nest Mulling Spice
- 1-2 Tbsp apple juice
- ¼ tsp of salt
- ½ cup caramel sauce
Directions
Preheat oven to 325 degrees.
Butter and flour a bundt or tube pan.
Combine butter and sugar in a mixing bowl. Beat until fluffy, about 4 minutes. Add in eggs one at a time, beating mixture after each egg. Add in vanilla.
In another bowl, combine flour, baking soda and salt. Alternate adding small amounts of flour mixture and apple cider to the mixing bowl, beginning and ending with the dry ingredients. Mix until just combined.
Pour batter into prepared pan and bake for 65-75 minutes or until a tester of toothpick placed into the middle of the cake comes out clean.
Cool cake in pan for 10 minutes. Remove from pan and cool to room temperature.
Make glaze by mixing sifted powdered sugar with mulling spices. Add in 1 TBSP of apple juice at a time, until sugar mixture is just incorporated. Add in caramel sauce. Stir until mixed well.
Drizzle over cake.
