Cook Time: 20–25 minutes
Ingredients
For the Burgers
- 2.5–2.7 lbs. 80/20 ground beef, divided into 4 thick patties
- Salt, to taste
- Onion powder, to taste
- Freshly cracked black pepper, to taste
- 4 slices Gouda cheese
- 8 slices bacon
- 4 brioche buns
- Butter, for toasting buns
- Mayonnaise, for serving
For the Blackberry Jalapeño BBQ Sauce
- ¼ cup Raven’s Nest Gourmet Blackberry Jalapeño Jam
- ¼ cup BBQ sauce
For the Toppings
- 1 large yellow onion, thinly sliced
- 1–2 jalapeños, sliced
- 1 tablespoon olive oil
- 2 cups fresh arugula
Instructions
1. Make the Blackberry Jalapeño BBQ Sauce
In a small bowl, whisk together the Blackberry Jalapeño Jam and BBQ sauce until smooth and well combined. Set aside.
2. Cook the Bacon
Cook bacon until crispy. Transfer to a paper towel-lined plate and set aside.
3. Grill the Onions & Jalapeños
Place a cast-iron skillet directly on the grill over medium-high heat. Add olive oil, followed by the sliced onions and jalapeños.
Cook for 10–15 minutes, stirring occasionally, until softened, caramelized, and lightly charred.
4. Grill the Burgers
Prepare a charcoal grill with a two-zone fire, creating a hot direct-heat side and a cooler indirect-heat side.
Form the ground beef into 4 thick patties, making them slightly larger than the brioche buns. Season generously with salt, onion powder, and freshly cracked black pepper.
Grill the burgers over direct heat for 3–4 minutes per side. If needed, move them to indirect heat to finish cooking.
During the final minute of cooking, place a slice of Gouda on each burger and close the grill lid to allow the cheese to melt.
Butter the brioche buns and place them cut-side down on the grill. Toast until golden and lightly charred.
5. Build Your Burger
Layer each burger in this order:
Bottom bun → mayonnaise → Gouda burger → Blackberry Jalapeño BBQ Sauce → crispy bacon → grilled onions & jalapeños → fresh arugula → extra BBQ sauce → top bun
Serve immediately and enjoy!
The Finishing Touch
For an extra hit of Blackberry Jalapeño flavor, drizzle a little more sauce over the burger just before serving.
Perfect for: Backyard BBQs, summer cookouts, game days, or anytime you're craving a burger with a little something extra.
